Spirit of Yorkshire define each part of the whisky creation process themselves. They choose the type of barley they use based on quality alone. They farm that barley in a sustainable way, leading the way with environmentally friendly farming. They only use their own homegrown Yorkshire barley. And they distill their whisky based on the senses - by hand and nose . Their casks are sourced from the best cooperages, ensuring that the wood is of the same quality as the spirit.
Mentored by the late whisky expert Dr Jim Swan, Spirit of Yorkshire make whiskies that don’t just replicate scotch. Instead, they take the best of old traditions and then apply new thinking to create something that's unique, something that's all of their own: Filey Bay whisky.
