Caol Ila 14 Year Old Tasting Notes

Woody's tasting notes

Nose: Maple syrup, bacon, sweet smoke, star anise, almond and marzipan.

Palate: Oily with salted meats, warm pineapple, ginger sponge and other winter spices.

Finish: Drying finish with herbal notes and bitter dark chocolate.

Ed's tasting notes

Colour: Natural colour, dark amber or burnished gold.

Nose: Smoke from oak logs burning in the brick hearth of a country pub. Salted caramel and apple chutney. The alcohol is well integrated.

Palate: Medium to full mouthfeel, great texture. Smoked honey-glazed ham, on a sea-sprayed beach. Stewed apple with blackberries. Dry roasted nuts and almonds, with a touch of wood spice.

Finish: Medium length. Ginger and chocolate, with Islay smoke. A little bright spice leaves the palate ready for another sip.

Overall: A really yummy dram - if you're a Caol Ila fan, you'll love this.

Distilled on October 24, 2007, and bottled on May 24, 2022, this Islay whisky captures the distillery’s signature balance of smoky maritime character and subtle sweetness. Matured exclusively in a single refill Pedro Ximénez cask (cask 317310), it showcases rich layers of dried fruits, dark chocolate, and a gentle, smoky finish. Bottled at cask strength (57.1%) with natural colour and no chill filtration, it’s an unadulterated expression of Caol Ila’s craftsmanship. With only 252 bottles available, this is a limited edition perfect for fans of Islay’s bold yet nuanced whiskies.

Meet The Founder

Woody Tan

Originally from Hong Kong, Woody Tan has lived in Scotland since 2011. He studied an MSc in Brewing and Distilling at Heriot-Watt University, and then went into the cask trade and warehouse keeping. While looking after casks, he started to discover gems that he felt had to be shared with fellow whisky lovers. He bottles these special casks under his Woodrow’s of Edinburgh label.

Woody has an excellent palate, and a knack for uncovering really flavoursome casks. He’s also a wizard when it comes to cask experiments, and has released some interesting cask-finished whiskies.
