About This Uncharted Whisky release
This Bunnahabhain 7 Year Old Whole Lotta Rose from Uncharted Whisky Company, founded by Jack Breslin and Dana de Vos, is a youthful and characterful Islay single malt that balances sweet peat, coastal freshness, and vibrant fruit in a wonderfully approachable style.
Distilled in 2019 and bottled in March 2026, this release matured in a refill bourbon cask (UC056). Refill wood allows the spirit to remain at centre stage, preserving the distillery’s natural character while adding gentle vanilla sweetness and subtle oak structure. In this case, the cask has allowed the whisky’s peaty and coastal elements to develop without becoming overpowering, creating a remarkably balanced dram for its age.
Unlike many Islay whiskies that focus on intensity, this release takes a more playful approach. The peat is soft and sweet rather than medicinal, working alongside dessert-like notes and fresh maritime character. The result is a whisky that feels distinctly Islay, yet remains highly accessible.
On the nose, sweet peat smoke mingles with pavlova, powdered sugar, and salty coastal air. The palate continues that theme, combining wafts of smoke with creamy malt, meringue, summer berries, and a gentle saline note that keeps everything fresh and lively. The finish is long and lingering, carrying sweet oak, soft smoke, berry fruits, and delicate meringue sweetness as the peat gradually fades into the background without ever disappearing entirely.
Bottled at 55.0% ABV, with natural colour and without chill filtration, this whisky delivers plenty of texture and flavour while retaining an effortless drinkability. With an outturn of 644 bottles, it offers a distinctive and highly enjoyable take on young Islay whisky.
