Nose: Aroma’s of unwrapping a dark chocolate bar. Rum raisin fudge and fruitcake. Butterscotch slinks about too. This is a decadent glass of whisky.
Palate: Rich high cocoa chocolate. Treacle soaked pudding. Cinnamon Danish pastry and spice spice spice. You would never think this was 61.7%.
Finish: An enormous depth of PX sherry lingers on the palate after the alcohol is gone. This is truly a sherry bomb.
About This Uncharted Whisky release
This Braeval 11 Year Old, Hot Chocolate, from Uncharted Whisky Company, founded by Jack Breslin and Dana de Vos, is an unapologetically rich Speyside single malt that takes the concept of a sherry bomb and pushes it to its logical conclusion.
Distilled in October 2014 and bottled in April 2026, this release comes from a single PX sherry cask (UC063). Braeval’s naturally elegant and floral spirit is typically associated with lighter fruit and honeyed notes, but here it has been transformed by the intense influence of Pedro Ximénez sherry. The result is a whisky that feels less like a gentle Speysider and more like a decadent dessert served at cask strength.
PX sherry is renowned for its deep, syrupy sweetness, produced from sun-dried grapes that concentrate flavours of raisins, figs, dates, and molasses. Over eleven years, that influence has completely enveloped the spirit, creating a whisky of remarkable colour, texture, and intensity.
The nose immediately delivers dark chocolate, rum and raisin fudge, fruitcake, and butterscotch, with layer upon layer of rich sweetness emerging from the glass. The palate is every bit as indulgent, revealing high-cocoa chocolate, treacle-soaked pudding, cinnamon Danish pastry, and warming spice. Despite its formidable 61.7% ABV, the whisky remains surprisingly approachable, with the richness of the cask influence softening the alcohol and carrying the flavours effortlessly across the palate.
The finish is immense, with waves of PX sweetness lingering long after the whisky itself has faded. Dark chocolate, dried fruits, molasses, and spice continue to evolve, creating a finish that feels almost endless.
Bottled at natural cask strength, with natural colour and without chill filtration, this is a whisky that fully embraces the power of PX maturation. With an outturn of just 180 bottles, it is a limited release that will appeal to lovers of richly sherried Scotch and intensely flavourful drams.
