This North British 30 Year Old from North Star Spirits, founded by Ian Croucher, is a beautifully mature Lowland single grain whisky that showcases the depth, creaminess, and tropical character long-aged grain spirit can develop over time.
Distilled in December 1995 and bottled in March 2026, this whisky spent three decades maturing in a refill hogshead, a cask that allows extended ageing without excessive oak extraction. Rather than dominating the spirit, the refill wood provides a gentle framework, allowing the whisky to evolve slowly into a rich and highly textural old grain profile.
North British Distillery is one of Scotland’s most important grain distilleries, and at this age the spirit develops the qualities enthusiasts often seek from mature grain whisky: creamy texture, tropical sweetness, soft oak, and rum-like richness.
On the nose, the whisky opens with classic mature grain character - sweet rum notes, gentle estery solvents, polished oak, and a softly nostalgic sweetness that only long ageing can bring. The palate is exceptionally creamy and weighty, coating the mouth with vanilla-rich grain sweetness, soft oak, and warming allspice. As it develops, the whisky leans further into tropical and rum-adjacent territory, revealing coconut, sweet oak, and lingering confectionery notes.
The finish is long, mellow, and deeply satisfying, with coconut cream, soft spice, and rich rum-like sweetness gradually fading into polished oak.
Bottled at cask strength (50.2% ABV), with natural colour and without chill filtration, this is a whisky that balances maturity with freshness remarkably well.
