This Lindores Abbey 6 Year Old from North Star Spirits, founded by Ian Croucher, is a bold and modern Lowland single malt that showcases the evolving character of one of Scotland’s most exciting newer distilleries.

Distilled in July 2019 and bottled in March 2026, this whisky was matured in a single ex-peated PX sherry hogshead, a cask style that layers together rich sherry sweetness, lingering peat influence, and deep oak character. For a youthful whisky, the result is impressively mature in profile, balancing vibrant fruit with smoke, salinity, and richness.

Lindores Abbey Distillery draws inspiration from one of the most historically significant whisky sites in Scotland, often producing a spirit that combines fresh orchard fruit with malty sweetness and elegant structure. The ex-peated PX cask pushes that profile into darker and more complex territory, adding smoke and treacle richness without masking the spirit’s natural brightness.

On the nose, light smoke and salty sea air emerge first, bringing embers, brine, and a subtle coastal edge despite the whisky’s inland origins. The palate opens into juicy orchard fruits, with stewed apples, ripe pear, creamy vanilla, and caramelised sugar delivering richness and texture. Beneath the sweetness sits a darker undercurrent from the PX cask; toasted nuts, treacle, and soft smoke gradually building toward the finish.

The finish is deep and warming, carrying lingering almonds, toasted oak, and rich treacle sweetness alongside fading peat embers and soft spice.

Bottled at a powerful 60% ABV, with natural colour and without chill filtration, this is a whisky with plenty of intensity and concentration, yet one that remains balanced and expressive. As a single cask release, it offers a fascinating snapshot of Lindores Abbey’s developing spirit and its ability to stand up confidently to active cask maturation even at a young age.
