New Forms Moscatel Sherry Tasting Notes

Nose: Caramelised orange peel, tart lemon, brown butter poached peaches, cooked apples with icing sugar, sauternes, caramel and dusty oak.

Palate: A rich, oily brown butter note, bright citrus and tart peach and nectarine, orange blossom, burnt toffee, cinnamon and a fiery touch of ginger.

Finish: Nutty toasted oak – almond and walnut skin, lingering bitter citrus peel and warming spices, with a breath of poached nectarine.

New Forms is an exploration of possibility – an invitation to reimagine what the London Distillery Company’s single malt whisky can become.  Drawn from the rare and finite casks of the original distillery, this series looks forward rather than back, reshaping our spirit through bold, modern interventions.

The fino sherry cask introduces a different kind of tension. Its influence is more architectural – saline, nutty, and delicately oxidative. Rather than diminishing the fruit, it reframes it, lending the spirit a more chiselled structure and precision while allowing bright stone fruit notes to resonate. It shows how the LDC spirit responds when asked to become more angular and more deliberate.

Matt brings a deep understanding of heritage whisky-making techniques, ensuring that every TLDC whisky will be distinctive and of the highest quality.

Matt’s journey into whisky began many years ago with a fascination for flavour derived from his experience in cookery. Over the years, he has honed his expertise across various roles, from cask selection and maturation to blending and production. His meticulous approach allows The London Distillery Company to craft whiskies that are not only rooted in time-honoured techniques but also push the boundaries of what a London whisky can be.
