Bottled especially for Islay Festival 2025, this 13-year-old Caol Ila from Brave New Spirits is a distinctive release within the Cask Masters range, showcasing how carefully selected wine casks can elevate Islay peat without overwhelming it. Distilled on 11 May 2011 and bottled on 14 March 2025, this single malt has been finished in a first fill Château Chizay white wine barrique from Ukraine, before being bottled at natural cask strength (53.9%), with natural colour and no chill filtration. Just 258 bottles were released.

Caol Ila’s spirit is known for its clean, precise peat smoke and coastal minerality, making it particularly well suited to sympathetic wine cask finishes. Château Chizay, located in the Transcarpathian wine region of Ukraine, is renowned for expressive white wines with bright acidity and aromatic clarity. When used as a finishing cask, this style of white wine barrique tends to bring freshness, citrus lift, and subtle orchard fruit rather than overt sweetness or heavy tannin.

Meet The Founder

Selim Evin

Selim Evin's love affair with whisky began as a teenager when he accompanied his grandfather on a trip to Scotland. Visiting various distilleries, he was fascinated by both the art of whisky making and the stories behind the whiskies. This early experience left an indelible mark on him, igniting a passion that would later earn him the nickname "Malt Chaser."

In 2013, he made the bold decision to leave a successful business behind and pursue his true calling. He founded Chapter 7, an independent bottler that combined his passion for whisky with his love for literature. The name "Chapter 7" was inspired by the seven ages of man from Shakespeare's works. It symbolises the stages of life that whisky goes through, each stage telling a different story.
