About this Càrn Mòr whisky
This Caol Ila 14 Year Old from Morrison Distillers was released under the Càrn Mòr Strictly Limited range, bringing together two of whisky’s most compelling flavour profiles: maritime Islay peat and classic Oloroso sherry maturation.
Distilled in 2012 and bottled in 2026, this single malt spent its maturation in a single Oloroso sherry butt, a cask style renowned for adding depth, dried fruit richness, and warming spice. Caol Ila’s spirit is particularly well suited to sherry wood, with its clean, coastal peat smoke providing a perfect counterpoint to the sweeter and darker notes developed through maturation.
Unlike heavily medicinal styles of Islay whisky, Caol Ila is often admired for its elegance and balance. Here, the Oloroso influence enhances rather than dominates, allowing the distillery’s signature smoky character to remain firmly at the heart of the whisky.
The whisky opens with layers of peat smoke intertwined with smoky cured meats and rich dried fruits. The combination creates a wonderfully savoury profile, where maritime smoke, salted air, and gentle sweetness work together seamlessly.
