This Bunnahabhain 21 Year Old from Morrison Distillers is part of the acclaimed Càrn Mòr Celebration Of The Cask series, showcasing the elegance and maturity that long bourbon cask ageing can bring to one of Islay’s most distinctive distilleries.

Distilled in 2005 and bottled in 2026, this single malt spent over two decades maturing in a single bourbon barrel. Unlike many of Islay’s better-known peated malts, Bunnahabhain is celebrated for its unpeated house style, producing whiskies that emphasise fruit, honey, nuts, and coastal character rather than smoke. Extended maturation in bourbon wood allows these qualities to evolve gracefully, developing additional richness and complexity while preserving the spirit’s natural balance.

Over 21 years, the interaction between spirit and oak has created a whisky of impressive depth. The bourbon barrel contributes soft vanilla, gentle spice, and creamy texture, while the distillery character remains firmly at the forefront.

The nose and palate are built around generous notes of cooked apples, stewed fruits, and rich honeycomb sweetness. Layers of orchard fruit and mature malt richness emerge with time, supported by subtle oak influence and a silky texture that only prolonged ageing can deliver. The sweetness feels natural and integrated, creating a whisky that is rich without becoming heavy.

The finish is long, smooth, and warming, carrying lingering fruit, honeyed malt, and gentle oak spice that gradually fades into a soft coastal freshness.

Bottled at cask strength (52.4% ABV), with natural colour and without chill filtration, this release captures the full character of the cask while maintaining remarkable balance and drinkability. With an outturn of just 192 bottles, it is a highly limited release that highlights the rewards of patient maturation and quality bourbon cask ageing.

The Morrisons

The Morrison's are one of the oldest whisky families in Scotland. The dynasty started in the 18th century when they were grocers. Over the centuries since, they have grown into whisky brokers, blenders, and distillers. Today they are known as Morrison Scotch Whisky Distillers and are led by Jamie and Brian Morrison.

Jamie and Brian release whiskies under three brands. Old Perth is their sherried range, and Mac-Talla is their Islay range, and then Carn Mor releases small batch whiskies from a range of distilleries.
