Scotch Tasting Notes

Nose: Wakes you up with coastal notes of limestone from the cliff face, sea salt and brine from the cashing waves, and smouldering drift wood from the campfire on the cliff top. There are also bright elements of lime and peach, sweet notes from barley sugar and faint honey, and savoury notes of cigar leaves and wet ferns.

Palate: A complex palate you can sit and decipher. White wine and white grapes sit alongside citrus notes of lemon and lime. There's sea salt, bay leaves, cinnamon and nutmeg from your kitchen cupboard. Further notes of green tea, and a sweetness in the form of wine gums and more of that honey we saw on the nose. Finally, tropical fruits appear, kiwi, pineapple, and perhaps mango.

Finish: A long, lingering and satisfying finish that keeps on giving. Drying, with tropical fruits and citrus. Cinnamon, green tea and white wine are there, together with more of that coastal sea salt and the oak of the cask.

About this whisky

We're big fans of Caol Ila. We find it offers a lot; yes that coastal characteristic we look for from Islay, but also further notes that make for a complex (and most enjoyable!) whisky. And, we've enjoyed Caol Ila several releases The Single Cask have bottled this year. This is their Christmas bottling; so you know it has to be special. And it is indeed a delicious whisky that Islay fans will really enjoy. Cracking value, too.
