Selim's tasting notes

Nose: Candlewax, hazelnuts, cardamom and Thai basil.

Palate: Vanilla, Williams pears and mezcal.

Finish: Long and memorable with dark roasted almonds, earthiness and lemon curd.

Ed's review

Colour: Natural colour, pale straw. Evenly coats the glass.

Nose: Lightly charred oak. Walnuts and vanilla. Dried flowers.

Palate: Medium mouthfeel. Vanilla and granola with nuts and oats, balanced against orchard fruit notes of apple and pear. Alcohol is well integrated.

Finish: Medium to long. Mocha coffee, nuts and citrus.

Overall: A lovely Ben Nevis, quality spirit in a great, classic, bourbon cask. Good bottling strength, suits the dram well.

About this Chapter 7 whisky

Built in 1825 Ben Nevis has had many owners. Joseph Hobbs, a spirits smuggler during prohibition, owned the distillery from 1951 to 1981. The distillery is now owned by Asahi Group and one-third of its new make is going into Nikka blends. Ben Nevis has become a victim of its own success with great releases from Indie bottlers. Chapter 7's Highland 19 YO Small Batch has won Whiskies of the World Gold Medal in San Francisco back in 2017. Now, unfortunately, Ben Nevis casks are becoming a rare find. This 8 year old bourbon barrel is a great example of what this distillery can deliver at a younger age.

Meet The Founder

Selim Evin

Selim Evin's love affair with whisky began as a teenager when he accompanied his grandfather on a trip to Scotland. Visiting various distilleries, he was fascinated by both the art of whisky making and the stories behind the whiskies. This early experience left an indelible mark on him, igniting a passion that would later earn him the nickname "Malt Chaser."

In 2013, he made the bold decision to leave a successful business behind and pursue his true calling. He founded Chapter 7, an independent bottler that combined his passion for whisky with his love for literature. The name "Chapter 7" was inspired by the seven ages of man from Shakespeare's works. It symbolises the stages of life that whisky goes through, each stage telling a different story.
